I’ve stumbled upon greatness with this recipe. It sounds like a lot of ingredients and it kind of is- but everything goes so well together. Local pears and fresh sage from my garden really make this recipe pop- but don’t worry if you have to go store bought.

This past summer we’ve been so happy to be able to have some closer friends and family over again and i’m always looking for delicious but easy to throw together meals to prepare. The one thing I hate is cooking while I have guests here. I always try to prep as much as I can before they arrive so I can throw it all together quickly! This flatbread pizza is just that. Pears are also currently in season here in New England which makes this the PERFECT thanksgiving appetizer.
I’ve recently discovered Stonefire brand of pre-made naan, pizza crusts and flat breads at my local grocery stores. It cuts down most of the work for you. I love having these at home because you can really throw anything you want on there for a quick and easy meal.


I think the key to success here was the sage browned-butter that pulls everything together. And is probably the only part of this recipe that needs a little eye on it. I prep this well in advance the same day before company comes over so all i have to do is pop it in the oven when i’m ready. This flatbread is full of flavor so best compliments to it are a light salad and crisp white wine or citrus cocktail.

Pear and Bleu Cheese Flatbread with Prosciutto and Sage
- 1 precooked flatbread crust (You can also use Naan if you can’t find the square!)
- 4 tbsp, butter
- 1 pear, peeled and sliced thin (I use my mandolin to ensure a uniform thickness but you can always slice by hand)
- 3 oz thin sliced prosciutto
- 1/2 cup blue cheese
- handful of fresh sage leaves, reserve some for garnish
Preheat your oven for 400 degrees. In a light colors sauce pan melt your butter over medium heat until bubbling. Continue to stir and keep an eye on it while it turns brown. You need a light colored sauce pan to watch the color. It will turn fast! Once it’s browned add 2 sage leaves and remove from heat.
Brush the flat bread with the sage butter. Then spread the pears on top in a thing layer. Sprinkle Blue cheese all over to top.
Cook in oven for about 12-15 minutes. Until Cheese is melted and starts to bubble/brown. Drizzly extra sage butter on top (optional).
Cover warm flatbread with torn prosciutto, extra sage butter and chopped saged.
